Today, about 20% of the island's cultivable land is still planted with sugarcane for rum production. The freshly cut sugar cane stalks are taken to the mills and immediately pressed to prevent them from drying out. The resulting sugar cane juice is enriched with yeast and fermented for 48 hours.

This mash is distilled in 3 different copper column stills, called Barbet columns, each of which is 7.5 m high and has 15 plates. As the stills have different diameters, the 3 distillates produced also have different aromas. By the perfect blending of these three components and the subsequent maturation in French oak barrels (225 l) the producers create an agricultural rum with a special taste.

As the distillery is located near the sea, the rum is impregnated with an extraordinary salinity during its aging, which distinguishes it from other rums. It is bottled without added sugar, caramel or other ingredients.
