It is a blend of rums from different vintages and different production methods. We use distillates that have been produced in Pot Stills which give it a rich body and on the other hand, rums distilled in column stills which have been chosen for their lighter body. Mainly the Demerera Solera No. 14 rum is matured in ex-bourbon American oak barrels which are at the origin of this creamy sweetness. The spicy character of this rum is given by aging in fresh Pedro Ximenez and Oloroso Sherry barrels for 12 months. A small percentage of very old Enmore rum, distilled in the Coffey Still wooden still, is finally added to the blend, giving it a powerful complexity and character.
